Hikari Blend Matcha
by now anyone that matchas with me (yes, that’s a verb) knows that i’m a die hard fan of Breakaway matcha. i likely love it because i see in founder Eric Gower the same geeky, Zen-situated, bypass the BS, fierce love streak i have. simply put, we go all the way in, and it shows. to recap, in this “hyper premium” category, Blend 95 is my daily go-to. Rikyu is for when i want to hit-the-pause button. Hikari is for riding that great emerald green cloud in the sky into the sublime state of relaxed awareness. from here you can see forever.
METHOD:
the modern method of a hand frother is great, but to go all the way in with your finest cups of matcha, it is well worth it to invest in the full sensory experience of whisking by hand. 1g:60ml (1/2 tsp:2oz or a heaping *chashaku* — tea scoop.) is a good starting point, and adjust to taste. no more than 80C/170F. like all good things, learning to whisk takes practice. it’s in the wrist! in time, finding the *chawan* tea bowl and *chasen* tea whisk you love become part of the whole experience. a few of my favorites above.
