Lichee-Infused Red Tea
while on vacation, i made my way through tea samples i’ve collected over the years. i surfaced a lichee-infused red tea that is likely 7 years old. we westerners call them black, but one look at the liquor will tell you why that’s notright. while i’m not usually for infused teas, lichee is the exception. it’s a disarming explosion of sweet tropics. i brewed mine hot, but it’s the cold brew that will add a cool breeze to many a summer day.
METHOD:
i used this really sweet, tiny 50ml pot made of zhuni ( jhoo-NEE) clay. 3 grams of tea at 92C for 1 minute, and wow….syrupy fruit with a tang reminiscent of the finest maple. i’m up to 5 rounds as of this writing, and will already be up all night as a result, but 8-9 is possible.
