Phoenix Classic pairing notes
in the last episode of Rev5 (i’ve always wanted to say that) i misspelled the Phoenix of Phoenix Classic style oolong. fenghuang is translated into phoenix but aren’t like the western version at all. they’re rendered as a mix of several creatures, embody the feminine principle that reigns over all birds and represents the empress in royalty.
my favorite thing about it is the rounded flavors that have no bitterness. astringency, yes. bitterness, no. mature green flavors provide a subtle undertone to baked peaches and sweet potatoes. the astringency stands up well to all manner of bread products, things that are grilled and/or have umami/meaty flavors. think: pizza, pastries, scones, steamed buns like cha siu bao which even though i haven’t eaten pork in over 35 years are kind of amaaaaazing. i wouldn’t pair with salad-type greens like light lettuces, but spinach and kale with any kind of amino, soy and mushrooms? yeah, that’s a thing.
