Pre-Qingming Xi Hu Long Jing
West Lake Dragon Well
Pre-Qingming Xi Hu Long Jing (West Lake Dragon Well) is arguably the most famous green tea in China and since China produces the most green and most tea in the world, that makes it the #1 tea.
Harvested in the perfect conditions created around the West Lake in Hangzhou province, this one comes from the the Meijiawu which is one of the finest. Leaves harvest prior to the qingming or Tomb-Sweeping Day that honors ancestors by cleaning their final resting place is the most fine. Truly the finest of the fine, these tender buds pregnant with nutrients building up since fall taste like verdant vitality itself.
METHOD:
there are few tea steeping methods as satisfyingly meditative as this leaves falling in a glass approach. boil first then let cool to 75-80C/167-175F, , pour enough 1/3 glass full, drop in 2grams or 1tsp dried leave for 8oz. swirl the glass a little then add the remaining water. wait long enough to allow most of the leaves to fall as they become saturated (3 minutes-ish.) enjoy the beautiful show. strain into a second glass if the leaves concern you. these tender buds prefer to find their own way so do add water first and boiling water is a no-no. steep 2-3 times.
